Spelt, carrot and chocolate muffins

Receita hoje para jantar

Ingredients for 12 muffins:

3 organic eggs,
100 g of brown sugar or coconut sugar;
50 ml of vegetable oil;
180 g of spelt flour;
1,5 tea spoons cinnamon;
1 tea spoon vatel’s traditional sea salt;
1,5 tea spoon yeast;
1 grated carrot;
1 grated apple;
50 g 70% cocoa chocolate.

Preheat the oven at 180ºc. In a bowl, add the eggs and sugar. Mix it well. Add the oil and mix until forming a homogeneous batter. In another bowl, mix the flour, yeast, cinnamon and salt. Add the liquid ingredients to the solids, mixing it all well. Add the carrot, apple and the chocolate, making sure that it is well mixed. Place the dough in muffin tins until ¾ of capacity and put them in the oven for 25 minutes. Take out of the oven and resist for a few minutes so that you don’t burn yourself!
