Ham and dried tomato cake

“Receita Vatel by Chef Justa Nobre”

Ingredients (10 people) – for the chicken breast:

7 eggs;
2 dl of milk;
1 dessert spoon of vatel’s sea salt;
2 dl of olive oil;
300 g wheat flour (without yeast);
50 g sweet potato flour;
1 teaspoon yeast;
1 dessert spoon of vatel’s baking soda;
200 g grated são jorge cheese (or other to taste);
150 g chopped sun-dried tomatoes;
150 g chopped black olives;
150 g diced ham or smoked ham;
2 tablespoons of fresh thyme leaves;
2 tablespoons chopped chives

Preparation: break the whole eggs into a bowl, add the milk, vatel’s sea salt and olive oil. Beat for 2 minutes as if making a mayonnaise.

Gradually mix the flours, yeast, vatel’s baking soda and the remaining ingredients. Mix it well.

Line a baking tray and grease it with olive oil. Pour the mixture and cook in a hot oven at 160ºc for 15/20 minutes or until the toothpick comes out dry.

Remove from the oven, brush it again with olive oil and serve warm or cold cut into squares.
