Chicken nuggets

2 chicken breasts (or 500 g of turkey steak);
as desired milk.;
1 lemon juice;
2 garlic cloves;
vatel’s traditional sea salt;
2 teaspoons of vatel’s baking soda per 250 g of meat;
white pepper;
2 eggs;
wheat flour

Cut the chicken breast in small steaks. Place the baking soda on a plate. Place the steaks on the baking soda, put them on a container and let them rest for 15 minutes. Place the steaks under water to clean them from the baking soda. Add them to a deep tray, season with vatel’s traditional salt, white pepper and the thinly sliced garlic. Cover the steaks with milk, and add the lemon juice. Cover the tray with cling film and place on the fridge for the following day. The next day, take the steaks out of the tray and pat them dry with kitchen paper. Prepare three plates, one with the flour, another with a beaten egg and the other with the breadcrumbs, and follow this order. Bread each steak under the order above, pressing the breadcrumbs well, so that they stick to the steak. Keep the steaks. Place greaseproof paper in an oven tray. With a cooking brush, add olive oil to the greaseproof paper. Place the breaded steaks in the tray, and add a little bit of olive oil, ideally spraying it. Place the chicken nuggets in the oven at 190ºc, with ventilation, for 20-25 minutes. You might wish to turn the chicken nuggets midway through so that they cook uniformly. Take the tray from the oven, let it cool, and start to prepare the sandwiches. Open the bread, place the lettuce and tomato followed by the nugget. Enjoy with good company and ideally with a beautiful landscape in front you.

It is one of the first “seasonings” i remember. I still remember my grandfather antónio, reaching for his pocket to grab a small packet with baking soda and eating it. I confess that it made me feel in a strange way. Afterwards, i realized that he did it any time he ate too much. The baking soda helps digesting the food, and it was common to find small packets inside his pants when i helped my grandmother taking care of the clothing.

In today’s recipe, baking soda also has an important role. It softens the meat so that the chicken nuggets are juicier. It is a fairly easy trick, after cutting the chicken breast in small steaks, you place them in baking soda e let it rest for 15 minutes. Afterwards, place them in a mesh and pass through water. Once done, you can season as usual. The result is a tender and juicier meat.
