Chicken burger on beetroot bun

Ingredients for the beetroot bun:

400 g of flour 65 without yeast;
140 g of sweet potato;
100 g of beetroot;
1 sachet of granulated baker’s yeast;
350 ml of water to cook beetroot;
1 tea spoon vatel’s sea salt

Peel the sweet potatoes and beetroot and cook in water for 20 minutes. Reserve the cooking water. Add half the water needed for the recipe to the potatoes and beetroot and grind until you get a paste without pieces. In the other half of the water, dissolve the yeast and set aside. Pour the flour into a bowl and make a hole in the middle. Pour the salt and add the water with the yeast. Knead. Add the beetroot paste and sweet potato. Knead well. The dough is sticky but it has to have a consistency to shape a ball. If necessary, add a little more flour. Line a tray and make balls of dough, with your hands always floured. Cover with a cloth and let stand for half an hour. Heat an iron skillet well. Pour the dough balls, flatten them slightly if necessary and bake for 4-5 minutes on each side. Finally, take the cake laterally and turn it over the frying pan to bake on the side as well. The recipe yields 10-12 buns. They can freeze and thaw when needed.

Ingredients for the burger:

2 ground chicken breasts;
1 clove of garlic, finely chopped;
1 sprig of parsley;
ground pepper;
1 egg
2 soup spoons breadcrumb or oat flakes;
vatel’s sea salt special grills and barbecue

Add all the ingredients and knead well. Form balls and press to form the hamburger. Season the hamburgers with vatel’s sea salt special grills and barbecue (this salt is collected manually and does not undergo any kind of transformation) and grill in a non-stick frying pan.

Ingredients for caramelized onion:

1 red onion;
1 soup spoon olive oil;
1 tea spoon brown sugar

Pour the oil into a pan. Cut the onion into thin slices. Add to the oil and let it fry, over a low heat, stirring from time to time so as not to stick. When the onion is tender, add the sugar and let it caramelize a little more. It can be stored in an airtight bottle in the refrigerator for a long time.


With the help of a knife or scissors, open the bun in half. Add a layer of arugula, the hamburger, a slice of cheese and the caramelized onion. Finally, place the other half of the bun. And now just sit back, relax and enjoy a delicious and healthy fast food meal with immense pleasure.
