Warm banana and chocolate cake

“Receita Vatel by Chef Justa Nobre”

Ingredients (4 people):

245g flour;
10g baking powder;
400g sugar;
75g cocoa power;
10g vatel’s baking soda *;
as desired vatel’s fleur de sel;
3 eggs;
240g ripe banana;
120g semi-skimmed milk;
2 dl water;
1 dl olive oil

Preparation: in a large bowl, mix all the dry ingredients, the flour, baking powder, sugar, cocoa powder, vatel’s fleur de sel and vatel’s baking soda.* add all the liquids, the eggs, the milk, water and olive oil in a separate bowl. Add all the dry ingredients, slowly and mixing them well in this separate bowl, where you placed the liquid ingredients. Great a cake tin without a hole and sprinkle with flour. Add a part of the batter to the tin, place a sliced banana on top, and add the remaining batter over it. Cook in a preheated oven at 180ºc for roughly 40 minutes. Serve the warm cake with an ice-cream scoop of your choosing. Suggestion: raspberry or strawberry.

 

* vatel’s baking soda is a powerful ally in the kitchen.

– it helps to rise the dough of bread and cakes, making it softer. Add one coffee spoon of vatel’s baking soda per 500 g of flour. (attention: baking soda does not substitute baker’s yeast, but it can make the dough rise softer).
