Preparation: 40 min. – ingredients (3 people):
12 large shrimp;
600 g vatel’s fleur de sel;
1 bunch lemon-thyme
For the cold tomato sauce:
2 ripe tomatoes;
1 garlic clove;
4 soup spoons olive oil;
as desired pepper;
1 bunch of coriander or parsley
1 – prepare the sauce: blanch the tomatoes in boiling water for 20 seconds. Place them in cold water. Peel, cut and take the seeds from the inside.
2 – dice the tomatoes in a bowl, add the minced garlic, lemon zest, olive oil, 1 coffee spoon of vatel’s fleur de sel and pepper as desired. Mix, add the minced parsley or coriander, mix and keep.
3 – peel the shrimp, leaving only the head and tail. Mix the remaining vatel;s fleur de sel with the diced thyme.
4 – add the mix of vatel’s fleur de sel and thyme in a frying pan, and put on high heat, making sure that it is very warm. Add the shrimp on top, and spray a little bit of water on top of them. Let them cook 7 minutes on each side. Take them from the pan and serve with the cold tomato sauce.
