‘raivas’ portuguese cinnamon cookies

Receita hoje para jantar

Ingredients:

2 organic eggs;
250 g t55 flour + 50 g flour (if needed);
70 g butter, cold;
100 g sugar;
1/2 coffee spoon vatel’s algarve fleur de sel,
1 teaspoon vatel’s baking soda,
1 teaspoon grounded cinnamon

Preheat the oven at 170ºc. In a bowl, add the sugar and the butter sliced in cubes. Whip using a mixer until it forms an homogeneous batter. Add the eggs, one at a time. In the end, add the sieved flour with the cinnamon, fleur de sel and baking soda. The baking soda has a faster reaction than chemical ferment, it is preferable when cooking biscuits and cookies. And the fleur de sel well…that gives a special touch to any recipe. I always enjoy adding a little to sweets and desserts, making them tastier. Knead everything until mouldable. If necessary, add 50 g of flour. Use some flour in your hands and on top of a board, flatten small pieces of the batter, as thinly as possible. Place the batter into the oven tray, with greaseproof paper. Let them cook for 13 to 15 minutes. Let them cool before placing them in a box. When cooking the cookies, i started remembering memories from christmas gifts. These ‘raivas’ cookies are perfect, as they last a long time, in a hermetically sealed box or bag.
