Marinated mackerel fillets with grilled vegetables salad

“Receita Vatel by Chef Justa Nobre”

Ingredients (4 people):

8 mackerel, already filleted;
1,5 dl lemon juice;
3 dl cider vinegar;
10 g fresh dill;
1 teaspoon black pepper (peppercorn);
1 teaspoon vatel’s sea salt;
1 soupspoon of vatel’s baking soda;
2 litres water;
1 courgette;
1 eggplant;
150 g carrots;
4 portobello mushrooms


1 dl olive oil;
0,5 dl cider vinegar;
0,5 dl cognac;
Vatel’s sea salt (as desired);
10 g minced chive:
1 crushed garlic

How to: clean and dry on kitchen paper the mackerel fillets. Place them in a deep tray. In a bowl, mix the lemon juice, cider vinegar, dill, pepper and vatel’s grill sea salt. Mix the sauce well and let the fillets marinate in it. After 30 minutes, take them out of the marinade, dry and keep them on the side. Clean the vegetable in the water with the baking soda. Afterwards, clean them in regular water and let them dry. Cut the courgette and eggplant in slices with around 0.5cm thickness, slice the carrots, and cut the mushrooms in halves. Drizzle with olive oil and grill the vegetables. Place them on a platter and drizzle the vinaigrette made with the ingredients above. To finish, cut the mackerel fillets in halves and add them on top of the vegetables.
